Ingredients:

  • 2 slices sourdough or brioche bread
  • 1.5 tbsp salted butter or high-quality mayonnaise
  • 2.5 oz sharp cheddar cheese, freshly sliced or coarsely grated

Instructions:

  1. Soften 1.5 tbsp salted butter. Note: Hard butter will tear your bread, so give it 20 minutes on the counter first.
  2. Spread the butter evenly on one side of each slice of sourdough. Work edge to edge for total coverage.
  3. Coarsely grate 2.5 oz sharp cheddar cheese. Note: Grating increases surface area for a faster, more uniform melt.
  4. Place one slice of bread, butter side down, in the air fryer basket.
  5. Pile the cheddar onto the bread. Keep the cheese 1/4 inch away from the edges to prevent it from leaking and burning on the basket.
  6. Place the second slice of sourdough on top, butter side facing up.
  7. Slide the basket in and set to 370°F for 4 minutes until the top is light golden.
  8. Carefully flip the sandwich using a wide spatula. Listen for a crisp sound when the spatula hits the crust.
  9. Cook for another 3 to 4 minutes until the cheese is bubbling and the bread is deep mahogany.
  10. Let the sandwich sit for 60 seconds before slicing. This allows the cheese to set so it doesn't all run out instantly.
