Ingredients:

  • 1.5 lbs Yukon Gold potatoes, peeled and sliced into 1/4 inch rounds
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 medium green bell pepper, sliced into strips
  • 1 medium red bell pepper, sliced into strips
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, thinly sliced

Instructions:

  1. Preheat the air fryer to 390°F (200°C).
  2. In a large bowl, toss the sliced potatoes with 1 tablespoon of olive oil, half of the salt, and the black pepper until evenly coated.
  3. Place potatoes in the air fryer basket in a single or slightly overlapping layer and cook for 10–12 minutes, shaking the basket halfway through, until edges are pale gold.
  4. While potatoes roast, toss sliced green pepper, red pepper, onion, and garlic in the bowl with the remaining 1 tablespoon of olive oil and the remaining salt.
  5. Pour the vegetable mixture over the roasted potatoes and use tongs to gently fold them together.
  6. Set the air fryer to 375°F (190°C) and cook for 15–20 minutes.
  7. Shake the basket gently every 7 minutes until onions are translucent and peppers are charred.
  8. Remove from the basket and let them rest for 2 minutes before serving.
