Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- ½ cup (100g) granulated sugar
- 1 tbsp (8g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) fresh lemon juice
- ¼ tsp (1.5g) salt
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- 1 cup (240ml) whole milk
- ½ cup (115g) unsalted butter, melted
Instructions:
- Preheat your oven to 375°F (190°C). In a large bowl, toss the sliced peaches with sugar, cornstarch, cinnamon, lemon juice, and salt. Let them sit for 10 minutes to release the juices.
- Pour the melted butter into the bottom of a 9x9 inch baking dish, swirling it to coat the base.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk until the batter is smooth and velvety, being careful not to overmix.
- Pour the batter over the melted butter in the baking dish. Do not stir.
- Spoon the cinnamon-peach mixture evenly over the top of the batter.
- Bake for 40–45 minutes until the topping is golden-brown and the fruit is bubbling vigorously around the edges.
