Ingredients:

  • 6 cups (900g) fresh peaches, peeled and sliced
  • ½ cup (100g) granulated sugar
  • 1 tbsp (8g) cornstarch
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) fresh lemon juice
  • ¼ tsp (1.5g) salt
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • ½ tsp (3g) salt
  • 1 cup (240ml) whole milk
  • ½ cup (115g) unsalted butter, melted

Instructions:

  1. Preheat your oven to 375°F (190°C). In a large bowl, toss the sliced peaches with sugar, cornstarch, cinnamon, lemon juice, and salt. Let them sit for 10 minutes to release the juices.
  2. Pour the melted butter into the bottom of a 9x9 inch baking dish, swirling it to coat the base.
  3. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk until the batter is smooth and velvety, being careful not to overmix.
  4. Pour the batter over the melted butter in the baking dish. Do not stir.
  5. Spoon the cinnamon-peach mixture evenly over the top of the batter.
  6. Bake for 40–45 minutes until the topping is golden-brown and the fruit is bubbling vigorously around the edges.
