Ingredients:

  • 1 lb fresh rhubarb, trimmed and sliced into 1-inch pieces
  • 1/4 cup maple syrup
  • 1 tsp pure vanilla extract
  • 1 pinch sea salt
  • 1 tbsp water

Instructions:

  1. Slice the rhubarb into consistent 1-inch (2.5cm) segments to ensure even cooking.
  2. Place the sliced rhubarb and maple syrup into a medium-sized saucepan over medium-low heat.
  3. Simmer and stir occasionally for 10-15 minutes until the rhubarb is translucent and softened but still holds its shape.
  4. Stir in the vanilla extract and salt.
  5. If the syrup is too thin, increase heat to medium for 2 minutes to reduce the liquid until it reaches a glossy consistency that coats the back of a spoon.
