Ingredients:
- 1 lb fresh rhubarb, trimmed and sliced into 1-inch pieces
- 1/4 cup maple syrup
- 1 tsp pure vanilla extract
- 1 pinch sea salt
- 1 tbsp water
Instructions:
- Slice the rhubarb into consistent 1-inch (2.5cm) segments to ensure even cooking.
- Place the sliced rhubarb and maple syrup into a medium-sized saucepan over medium-low heat.
- Simmer and stir occasionally for 10-15 minutes until the rhubarb is translucent and softened but still holds its shape.
- Stir in the vanilla extract and salt.
- If the syrup is too thin, increase heat to medium for 2 minutes to reduce the liquid until it reaches a glossy consistency that coats the back of a spoon.
