Ingredients:
- 2 cups (250g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- ¾ cup (65g) Dutch-process black cocoa powder
- 2 tsp (10g) baking soda
- ½ tsp (3g) salt
- 1 cup (240ml) buttermilk, room temperature
- ½ cup (115g) vegetable oil
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 1 cup (125g) fresh raspberries
- 2 tbsp (30ml) lemon juice
- 2 tbsp (25g) sugar
- 1 cup (225g) unsalted butter, softened
- 3 ½ cups (420g) powdered sugar
- 2 tbsp (30ml) heavy cream
- 1 tsp (5ml) vanilla extract
- Gel food coloring (Black, Red, or Purple)
Instructions:
- Preheat the oven to 350°F (175°C). Sift the all-purpose flour, black cocoa powder, baking soda, and salt into a large bowl to remove lumps.
- In a separate bowl, whisk together the room-temperature buttermilk, vegetable oil, eggs, and vanilla extract.
- Gradually fold the wet ingredients into the dry ingredients until just combined; do not overmix to ensure a moist crumb.
- Divide the batter evenly among 22 cupcake liners and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- While cupcakes cool, combine raspberries, lemon juice, and sugar in a saucepan over medium heat. Simmer for 10-12 minutes until thickened into a jam-like consistency.
- Strain the raspberry mixture through a fine-mesh sieve to remove seeds, then allow the filling to cool.
- Use an apple corer or small piping tip to remove the center of each cooled cupcake. Fill the cavity with the raspberry reduction.
- Beat softened butter and powdered sugar until smooth, then mix in heavy cream and vanilla extract. Add gel food coloring as desired.
- Chill the frosting for 1 hour to ensure stability before piping decorative patterns onto the cupcakes.
