Ingredients:

  • 2 lbs frozen cubed hash browns
  • 2 tbsp vegetable oil
  • 1 lb ground breakfast sausage
  • 12 large eggs
  • 1/2 cup unsalted butter
  • 2 cups shredded sharp cheddar cheese
  • 12 large (10-inch) flour tortillas
  • 2 tbsp melted butter

Instructions:

  1. Preheat one side of the griddle to medium-high. Spread the vegetable oil and add the cubed hash browns in a single layer. Press them down firmly with your spatula and cook until deep golden-brown on all sides, roughly 8-10 minutes. Move them to the cooler zone of the griddle.
  2. On the hot zone, add the ground sausage. Break the meat apart with your spatula, searing it until the edges are browned and the fat has rendered. Once fully cooked, slide the meat over to join the potatoes.
  3. Lower the heat to medium and melt the 1/2 cup of butter. Pour in the whisked eggs. Using a folding motion, scramble the eggs until they are just set but still slightly moist. Fold in the shredded cheese and slide the eggs over the potato and meat mixture, tossing until the cheese is molten.
  4. Divide the mixture evenly among the 12 tortillas. Fold in the sides and roll tightly. Brush the seam side of each burrito with melted butter.
  5. Place burritos seam-side down on the medium-heat griddle. Sear for 2 minutes per side until the tortilla is toasted and mahogany-colored.
