Ingredients:

  • 1 lb pre-made pizza dough
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 8 oz thick-cut bacon, chopped
  • 6 large eggs
  • 2 tbsp heavy cream
  • 1 tsp salt
  • 1/2 tsp cracked black pepper
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup pure maple syrup
  • 2 stalks green onions, thinly sliced

Instructions:

  1. Heat the griddle to medium high. Spread chopped bacon across the surface and cook for 5-7 minutes until crisp and browned.
  2. Move the bacon to the cool zone of the griddle. Note: This keeps the bacon warm without burning it.
  3. Mix melted butter and garlic powder in a small bowl.
  4. Brush the pizza dough with the garlic butter.
  5. Place the dough onto the hot bacon fat. Press down slightly with your spatula.
  6. Cook for 3-4 minutes until the bottom is mahogany colored and releases easily.
  7. Whisk eggs, heavy cream, salt, and pepper. Pour onto a clear spot on the griddle and soft scramble until just set but still moist.
  8. Slide the eggs onto the seared crust and top with the reserved bacon.
  9. Sprinkle shredded cheddar over the top.
  10. Squirt a bit of water around the pizza and cover with a basting dome for 60-90 seconds until the cheese bubbles.
  11. Remove from heat. Drizzle with maple syrup and top with sliced green onions.
