Ingredients:

  • 3 large eggs
  • 1 cup whole milk
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 8 thick slices Brioche or Challah bread
  • 4 tbsp unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions:

  1. In a large mixing bowl, whisk together the eggs, milk, 1 tablespoon sugar, vanilla, and spices until velvety and no egg streaks remain. Pour the mixture into a shallow dish.
  2. Place bread slices into the custard. Soak Brioche for 30 seconds per side or Challah for 45 seconds per side until saturated but not falling apart.
  3. Preheat the Blackstone griddle to medium heat and spread the softened butter across the cooking surface.
  4. Lay the soaked slices on the griddle, leaving one inch of space between them. Cook for 3–4 minutes per side until the edges are set and the bottom is deep golden brown.
  5. While the second side is cooking, press a mixture of 1/4 cup sugar and 1 teaspoon cinnamon directly into the bread to create a caramelized crust.
