Ingredients:
- 1 lb (450g) Ground Beef (80/20 lean-to-fat ratio)
- 2 tbsp (15g) Taco Seasoning
- ½ tsp (3g) Garlic Powder
- ½ tsp (3g) Kosher Salt
- ¼ tsp (1g) Black Pepper
- 4 (6-inch) Flour Tortillas
- 4 slices (80g) Pepper Jack or Sharp Cheddar Cheese
- 2 tbsp (30ml) Neutral Oil
- 1 cup (30g) Shredded Iceberg Lettuce
- ½ cup (75g) Diced Roma Tomatoes
- ¼ cup (60ml) Sour Cream
- 1 tbsp (15g) Fresh Cilantro, chopped
Instructions:
- Combine the ground beef, taco seasoning, garlic powder, salt, and pepper in a mixing bowl.
- Form the mixture into 4 equal-sized balls (roughly 4 oz / 113g each), keeping the meat loose.
- Preheat the Blackstone griddle to medium-high heat (approximately 400°F / 204°C) and apply a thin layer of neutral oil.
- Place the beef balls on the griddle and immediately cover each ball with a flour tortilla.
- Press down firmly with a meat press or spatula, flattening the beef into the tortilla until it is about ½ inch thick.
- Sear for 3–4 minutes without moving them, until the beef is well-browned and the tortilla begins to pull away from the griddle.
- Flip the entire assembly (tortilla and beef together) and place a slice of cheese on top of the seared beef.
- Cook for another 2 minutes until the cheese is molten and the tortilla is golden-brown and crispy.
- Fold the taco in half and remove from heat, then add lettuce, tomatoes, sour cream, and cilantro.
