Ingredients:
- 2 cups (250g) 00 flour
- 3 large (150ml) room-temperature eggs
- 1/2 tsp (3g) fine sea salt
- 1 tbsp (15ml) extra-virgin olive oil
- 1 lb (450g) butternut squash, peeled and cubed
- 1/2 cup (125g) whole milk ricotta, strained
- 1/2 cup (50g) freshly grated Parmesan cheese
- 1/4 tsp (0.5g) ground nutmeg
- 2 tbsp (30g) unsalted butter, melted
- salt to taste
- black pepper to taste
- 6 tbsp (85g) unsalted butter
- 15 fresh sage leaves (5g)
- 1 tsp (5ml) fresh lemon juice
- 1/4 cup (20g) toasted pepitas
Instructions:
- Toss cubed squash with oil and salt. Roast at 400°F (200°C) for 25-30 minutes until the edges are mahogany-colored and tender.
- Process the roasted squash in a food processor until completely smooth.
- Fold in the strained ricotta, Parmesan, melted butter, and nutmeg. Season with salt and pepper. Set aside to reach room temperature.
- Create a flour mound on a clean surface. Make a well in the center and add eggs, salt, and olive oil.
- Using a fork, whisk the eggs, gradually pulling flour from the inner walls until a shaggy dough forms.
- Work the dough by hand for 8-10 minutes until it feels smooth and springs back when poked.
- Wrap the dough tightly in plastic wrap and let it sit at room temperature for 30 minutes to relax the gluten.
- Roll the dough through a pasta machine or with a rolling pin until thin sheets are formed.
- Place small mounds of filling on the dough sheet, cover with another sheet, and seal tightly, removing air bubbles.
- Cut into individual ravioli using a ravioli cutter or fluted pastry wheel.
- Boil ravioli in salted water until they float to the surface.
- Melt butter in a pan over medium heat until it browns and smells nutty. Add sage leaves until crisp, then stir in lemon juice.
- Toss ravioli in the brown butter sauce and garnish with toasted pepitas.
