- 1 lb sharp cheddar cheese, hand-grated
- 1 cup unsalted butter, softened to room temperature
- 2.5 cups all-purpose flour
- 1.5 tsp kosher salt
- 0.5 tsp cayenne pepper
- 0.5 tsp garlic powder
- 0.25 tsp smoked paprika
Instructions:
- Grate the sharp cheddar cheese using the large holes of a box grater. Ensure the butter is softened but not melting.
- In a stand mixer fitted with the paddle attachment, cream the grated cheese and softened butter together on medium speed until they form a uniform, bright orange paste.
- In a separate bowl, whisk together the all-purpose flour, kosher salt, cayenne pepper, garlic powder, and smoked paprika.
- Gradually add the dry ingredients to the cheese mixture on low speed. Mix only until the flour disappears to avoid over-working the dough.
- Divide the dough and roll into logs using plastic wrap. Chill in the refrigerator for at least 30 minutes until firm.
- Preheat oven to 350°F (175°C). Use a sharp chef's knife to slice the chilled logs into uniform 'coins' that are about 1/4 inch thick.
- Place rounds on parchment-lined baking sheets and bake for 15 minutes or until they reach a golden and crackling appearance.
