  • 1 lb sharp cheddar cheese, hand-grated
  • 1 cup unsalted butter, softened to room temperature
  • 2.5 cups all-purpose flour
  • 1.5 tsp kosher salt
  • 0.5 tsp cayenne pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp smoked paprika

Instructions:

  1. Grate the sharp cheddar cheese using the large holes of a box grater. Ensure the butter is softened but not melting.
  2. In a stand mixer fitted with the paddle attachment, cream the grated cheese and softened butter together on medium speed until they form a uniform, bright orange paste.
  3. In a separate bowl, whisk together the all-purpose flour, kosher salt, cayenne pepper, garlic powder, and smoked paprika.
  4. Gradually add the dry ingredients to the cheese mixture on low speed. Mix only until the flour disappears to avoid over-working the dough.
  5. Divide the dough and roll into logs using plastic wrap. Chill in the refrigerator for at least 30 minutes until firm.
  6. Preheat oven to 350°F (175°C). Use a sharp chef's knife to slice the chilled logs into uniform 'coins' that are about 1/4 inch thick.
  7. Place rounds on parchment-lined baking sheets and bake for 15 minutes or until they reach a golden and crackling appearance.
