Ingredients:
- 1 cup (120g) almond butter
- 1/2 cup (170g) pure maple syrup
- 1 cup (110g) vanilla whey protein powder
- 1/2 cup (60g) oat flour
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) sea salt
- 1/2 cup (90g) dark chocolate chips
- 1 tbsp (15ml) coconut oil
Instructions:
- Combine the almond butter and maple syrup in a bowl and stir until the mixture is a smooth, thick paste.
- Fold in the protein powder, oat flour, vanilla extract, and sea salt. Mix until a heavy, cohesive dough forms that no longer sticks to the sides of the bowl.
- Line an 8x8 inch baking pan with parchment paper. Transfer the dough to the pan and press down firmly using the back of a spatula until the surface is level.
- Place the pan in the freezer for 15 minutes to firm up the base.
- Melt the dark chocolate chips and coconut oil in 30-second bursts in the microwave until glossy.
- Pour the melted chocolate over the chilled base and spread evenly.
- Refrigerate for at least 2 hours until the chocolate is set and the bars are firm.
- Lift the parchment paper out of the pan and slice into 10 equal bars.
