Ingredients:

  • 1 cup (120g) almond butter
  • 1/2 cup (170g) pure maple syrup
  • 1 cup (110g) vanilla whey protein powder
  • 1/2 cup (60g) oat flour
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) sea salt
  • 1/2 cup (90g) dark chocolate chips
  • 1 tbsp (15ml) coconut oil

Instructions:

  1. Combine the almond butter and maple syrup in a bowl and stir until the mixture is a smooth, thick paste.
  2. Fold in the protein powder, oat flour, vanilla extract, and sea salt. Mix until a heavy, cohesive dough forms that no longer sticks to the sides of the bowl.
  3. Line an 8x8 inch baking pan with parchment paper. Transfer the dough to the pan and press down firmly using the back of a spatula until the surface is level.
  4. Place the pan in the freezer for 15 minutes to firm up the base.
  5. Melt the dark chocolate chips and coconut oil in 30-second bursts in the microwave until glossy.
  6. Pour the melted chocolate over the chilled base and spread evenly.
  7. Refrigerate for at least 2 hours until the chocolate is set and the bars are firm.
  8. Lift the parchment paper out of the pan and slice into 10 equal bars.
