Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) packed brown sugar
- 1/4 cup (50g) granulated white sugar
- 1 large egg
- 1 tsp (5ml) pure vanilla extract
- 1 cup (135g) finely shredded zucchini
- 1 cup (170g) semi-sweet chocolate chips
- 1/2 cup (50g) chopped walnuts or pecans (optional)
Instructions:
- Shred the zucchini using the smallest holes on a box grater.
- Place shredded zucchini in a clean kitchen towel and squeeze firmly over the sink to remove excess water while keeping the pulp damp.
- In a large bowl, beat the softened butter, brown sugar, and white sugar until pale and fluffy.
- Beat in the egg and vanilla extract until fully incorporated and smooth.
- Stir in the squeezed zucchini pulp until evenly distributed.
- Gradually add the flour, baking soda, salt, and cinnamon, mixing on low speed just until no streaks of flour remain.
- Fold in the chocolate chips and nuts using a spatula.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 10–12 minutes until edges are set and deep golden brown, but centers remain slightly soft.
- Cool on the pan for 5 minutes before transferring to a wire rack to finish setting.
