Ingredients:
- 2 lbs whole carrots, peeled and trimmed
- 2 tbsp extra virgin olive oil
- 1 tsp coarse sea salt
- 1/2 tsp cracked black pepper
- 3 tbsp clover honey
- 2 tbsp unsalted butter, melted
- 1 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
- 1/4 cup fresh Italian parsley, chopped
- 1 tsp flaky sea salt
Instructions:
- Preheat your oven to 400°F (200°C) and place your baking sheet inside while it warms up.
- Prepare the carrots by peeling and trimming them. If they are thicker than a thumb, slice them in half lengthwise to ensure even cooking.
- Toss the carrots with olive oil, coarse sea salt, and cracked black pepper in a large bowl.
- Carefully spread the carrots onto the hot baking sheet. Roast for 20 minutes until the edges start to brown.
- While carrots roast, whisk together the honey, melted butter, apple cider vinegar, minced garlic, and smoked paprika in a small bowl.
- Remove the pan from the oven, drizzle the honey glaze over the carrots, and toss with tongs to coat thoroughly. Return to the oven for the final 10 minutes until the glaze is tacky and mahogany-colored.
- A fork should slide into the thickest part of the carrot with almost no resistance.
- Garnish with fresh chopped parsley and flaky sea salt before serving.
