Ingredients:

  • 4 cups frozen pineapple chunks
  • 0.5 cup unsweetened pineapple juice
  • 0.5 cup full-fat coconut milk
  • 1 tbsp lime juice
  • 1 pinch sea salt
  • 1 tbsp honey

Instructions:

  1. Add the pineapple juice, coconut milk, lime juice, and sea salt to the bottom of a high-speed blender or food processor container.
  2. Add the 4 cups of frozen pineapple chunks on top of the liquid base.
  3. Start the blender on the lowest speed and quickly increase to high. Use a tamper to press the frozen fruit into the blades. Process for 30 to 60 seconds until a thick, frosty vortex forms.
  4. Transfer the mixture to a piping bag fitted with a large star tip. Pipe into chilled glasses in a circular motion to create a tall swirl and serve immediately.
