Ingredients:
- 4 cups (600g) frozen peach slices
- 2 tbsp (30ml) fresh lemon juice
- 1 tsp (5g) vanilla extract
- 1/2 cup (120ml) plain Greek yogurt
- 1/4 cup (60ml) honey
Instructions:
- Place the frozen peach slices, lemon juice, and vanilla extract into a high-speed blender. Pulse on high until the peaches are broken down into a thick, slushy consistency with no large chunks.
- Add the Greek yogurt and honey to the blender. Blend on low to medium speed just until combined, avoiding over-processing to prevent a foamy texture.
- Transfer the mixture into an airtight freezer-safe container. Smooth the top with a spatula and press a piece of parchment paper directly onto the surface to prevent ice crystals.
- Freeze for at least 4 hours, or until firm.
