Ingredients:

  • 1 cup (200g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk
  • 1/2 cup (115g) unsalted butter, melted
  • 2 cans (29 oz / 828g each) sliced peaches in heavy syrup, undrained
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground nutmeg
  • 1 tbsp (15ml) lemon juice
  • 1 tbsp (12g) granulated sugar
  • 1/2 tsp (1g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Pour the melted butter into the 9x13 baking dish, swirling it to coat the bottom and sides completely.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk until just combined. Pour this batter directly over the melted butter without stirring them together.
  3. In a separate bowl, toss the undrained peaches with the cinnamon, nutmeg, and lemon juice. Gently spoon the peach mixture over the top of the batter; do not stir.
  4. Sprinkle the top with the additional cinnamon-sugar mixture. Bake for 35–45 minutes until the edges are bubbling, pulling away from the sides, and the topping is deep golden brown.
