Ingredients:
- 1 cup (200g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
- 1/2 cup (115g) unsalted butter, melted
- 2 cans (29 oz / 828g each) sliced peaches in heavy syrup, undrained
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 1 tbsp (15ml) lemon juice
- 1 tbsp (12g) granulated sugar
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Pour the melted butter into the 9x13 baking dish, swirling it to coat the bottom and sides completely.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk until just combined. Pour this batter directly over the melted butter without stirring them together.
- In a separate bowl, toss the undrained peaches with the cinnamon, nutmeg, and lemon juice. Gently spoon the peach mixture over the top of the batter; do not stir.
- Sprinkle the top with the additional cinnamon-sugar mixture. Bake for 35–45 minutes until the edges are bubbling, pulling away from the sides, and the topping is deep golden brown.
