Ingredients:
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup (200g) granulated sugar
- 1 pinch salt
- 1/2 tsp coconut extract (optional)
Instructions:
- Shake the can of coconut milk well before opening. Pour the coconut milk, sugar, and salt into a small saucepan over medium heat.
- Whisk constantly until the sugar has completely dissolved and the liquid is smooth.
- Bring the mixture to a very gentle simmer. Let it simmer for about 5 minutes until it slightly coats the back of a spoon. Do not let it boil vigorously.
- Remove from heat. If any separation occurs, whisk vigorously or pulse in a blender until emulsified.
- Pour into a clean glass jar and let it reach room temperature before sealing and storing.
