Ingredients:

  • 1.5 lbs lean ground beef
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 15 oz can Ranch Style beans, undrained
  • 1 cup red enchilada sauce
  • 9.25 oz bag Frito corn chips
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup Monterey Jack cheese, freshly shredded

Instructions:

  1. Preheat your oven to 180°C (350°F). Note: This ensures the cheese melts quickly without burning the chips.
  2. Brown the beef in a large skillet over medium high heat.
  3. Add the diced onion and cook for 5 minutes until translucent and soft.
  4. Stir in the garlic and taco seasoning. Cook for 1 minute until fragrant.
  5. Pour in the beans (with their liquid) and the enchilada sauce.
  6. Simmer the mixture for 5-8 minutes until the sauce thickens and bubbles.
  7. Layer the chips into the bottom of your baking dish (or leave in the skillet if oven safe).
  8. Spoon the meat mixture evenly over the chips.
  9. Top with the cheeses in a thick, even layer.
  10. Bake for 15-20 minutes until the cheese is bubbly and golden.
