Ingredients:
- 1.5 lbs lean ground beef
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 15 oz can Ranch Style beans, undrained
- 1 cup red enchilada sauce
- 9.25 oz bag Frito corn chips
- 2 cups sharp cheddar cheese, freshly shredded
- 1 cup Monterey Jack cheese, freshly shredded
Instructions:
- Preheat your oven to 180°C (350°F). Note: This ensures the cheese melts quickly without burning the chips.
- Brown the beef in a large skillet over medium high heat.
- Add the diced onion and cook for 5 minutes until translucent and soft.
- Stir in the garlic and taco seasoning. Cook for 1 minute until fragrant.
- Pour in the beans (with their liquid) and the enchilada sauce.
- Simmer the mixture for 5-8 minutes until the sauce thickens and bubbles.
- Layer the chips into the bottom of your baking dish (or leave in the skillet if oven safe).
- Spoon the meat mixture evenly over the chips.
- Top with the cheeses in a thick, even layer.
- Bake for 15-20 minutes until the cheese is bubbly and golden.
