Ingredients:
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1.5 lbs boneless skinless chicken breasts
- 1 tbsp olive oil
Instructions:
- Place the chicken breasts between two sheets of parchment paper and use a meat mallet to pound the thicker ends until the breasts are a uniform thickness of about 3/4 inch.
- In a Ziploc bag or glass bowl, combine 1/4 cup olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, kosher salt, and black pepper. Add chicken and massage the marinade into the meat; let sit at room temperature for 15-20 minutes.
- Preheat the grill to medium-high heat and brush the grates with 1 tbsp olive oil.
- Place the chicken smooth-side down on the grill. Close the lid and cook for 5-6 minutes per side until deep brown grill marks appear.
- Remove the chicken from the grill when the internal temperature reaches 160°F (71°C). Transfer to a plate, tent loosely with foil, and let rest for 5 minutes until the temperature reaches 165°F (74°C).
