Ingredients:

  • 3 large fresh peaches (approx. 1.5 lbs / 680g), halved and pitted
  • 3 tbsp (42g) unsalted butter, melted
  • 1/4 cup (50g) light brown sugar, packed
  • 1/2 tsp (1g) ground cinnamon
  • 1/4 tsp (1g) vanilla extract
  • 1 pinch (0.5g) sea salt
  • 1 tbsp (8g) fresh mint leaves, chiffonade

Instructions:

  1. Preheat your oven to 375°F (190°C). Rinse the fresh peaches and pat them dry with a paper towel.
  2. Slice each peach in half along the seam and twist to remove the pit. Place the peaches cut side up in a 9x13-inch baking dish.
  3. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, vanilla extract, and salt until the mixture forms a smooth paste.
  4. Spoon equal portions of the glaze into the center of each peach half, spreading it slightly toward the edges.
  5. Bake on the center rack for 25–30 minutes until the edges soften and the brown sugar bubbles into a mahogany colored syrup.
  6. Remove the dish from the oven and let the peaches sit for 5 minutes.
  7. Spoon any remaining syrup from the bottom of the pan back over the fruit.
  8. Garnish with fresh mint leaves just before serving.
