Ingredients:

  • 3 cups (450g) cooked chicken breast, shredded or diced
  • 1/2 cup (115g) mayonnaise
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tbsp (15ml) fresh lemon juice
  • 2 stalks (60g) celery, finely diced
  • 1/4 cup (40g) red onion, finely minced
  • 2 tbsp (8g) fresh parsley, chopped
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Dice the celery and red onion into uniform, small pieces and set them aside in a small bowl.
  2. In a large mixing bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, salt, and pepper until the mixture is smooth and velvety.
  3. Add the shredded chicken to the bowl and stir until every piece is fully coated in the dressing.
  4. Gently fold in the diced celery, red onion, and chopped parsley. Mix just until combined to maintain the crispness of the vegetables.
