Ingredients:
- 3 cups (450g) cooked chicken breast, shredded or diced
- 1/2 cup (115g) mayonnaise
- 1/4 cup (60g) plain Greek yogurt
- 1 tbsp (15ml) fresh lemon juice
- 2 stalks (60g) celery, finely diced
- 1/4 cup (40g) red onion, finely minced
- 2 tbsp (8g) fresh parsley, chopped
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
Instructions:
- Dice the celery and red onion into uniform, small pieces and set them aside in a small bowl.
- In a large mixing bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, salt, and pepper until the mixture is smooth and velvety.
- Add the shredded chicken to the bowl and stir until every piece is fully coated in the dressing.
- Gently fold in the diced celery, red onion, and chopped parsley. Mix just until combined to maintain the crispness of the vegetables.
