Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • 0.5 cup (60g) powdered sugar
  • 1 teaspoon (5ml) pure vanilla extract
  • 2.25 cups (280g) all-purpose flour
  • 0.25 teaspoon (1.5g) salt
  • 0.75 cup (85g) finely chopped walnuts or pecans
  • 1 cup (120g) powdered sugar for coating

Instructions:

  1. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together the softened butter, 1/2 cup powdered sugar, and vanilla extract until smooth and fluffy.
  3. Gradually stir in the all-purpose flour and salt. Mix until a stiff dough forms.
  4. Fold in the finely chopped walnuts or pecans until evenly distributed.
  5. Shape the dough into 1-inch balls (approximately 1 tablespoon each) and place them 1 inch apart on the prepared baking sheets.
  6. Bake for 12 to 15 minutes. The cookies should be set and the bottoms lightly golden, but the tops should remain pale.
  7. While cookies are still warm but safe to touch, roll them in the remaining 1 cup of powdered sugar.
  8. Allow cookies to cool completely on a wire rack, then roll them in powdered sugar a second time for a thick coating.
