Ingredients:
- 1 cup (226g) unsalted butter, softened
- 0.5 cup (60g) powdered sugar
- 1 teaspoon (5ml) pure vanilla extract
- 2.25 cups (280g) all-purpose flour
- 0.25 teaspoon (1.5g) salt
- 0.75 cup (85g) finely chopped walnuts or pecans
- 1 cup (120g) powdered sugar for coating
Instructions:
- Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper or silicone mats.
- In a large mixing bowl, cream together the softened butter, 1/2 cup powdered sugar, and vanilla extract until smooth and fluffy.
- Gradually stir in the all-purpose flour and salt. Mix until a stiff dough forms.
- Fold in the finely chopped walnuts or pecans until evenly distributed.
- Shape the dough into 1-inch balls (approximately 1 tablespoon each) and place them 1 inch apart on the prepared baking sheets.
- Bake for 12 to 15 minutes. The cookies should be set and the bottoms lightly golden, but the tops should remain pale.
- While cookies are still warm but safe to touch, roll them in the remaining 1 cup of powdered sugar.
- Allow cookies to cool completely on a wire rack, then roll them in powdered sugar a second time for a thick coating.
