Ingredients:

  • 1 lb Yukon Gold potatoes, diced into ½-inch cubes
  • 12 oz breakfast sausage links or sliced kielbasa
  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 6 large eggs

Instructions:

  1. Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the diced potatoes and sausage with olive oil and smoked paprika.
  2. Spread the potato and sausage mixture in a single layer on a parchment-lined rimmed baking sheet. Roast for 20–25 minutes, tossing halfway through, until potatoes are golden brown and sausage is mahogany-colored.
  3. Remove the pan from the oven. Use a spoon or spatula to create 6 small wells or nests across the pan.
  4. Carefully crack one egg into each nest.
  5. Return the pan to the oven for 5–8 minutes. Remove when the egg whites are opaque but the yolks still have a slight jiggle.
