Ingredients:
- 1 lb Yukon Gold potatoes, diced into ½-inch cubes
- 12 oz breakfast sausage links or sliced kielbasa
- 2 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- 6 large eggs
Instructions:
- Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the diced potatoes and sausage with olive oil and smoked paprika.
- Spread the potato and sausage mixture in a single layer on a parchment-lined rimmed baking sheet. Roast for 20–25 minutes, tossing halfway through, until potatoes are golden brown and sausage is mahogany-colored.
- Remove the pan from the oven. Use a spoon or spatula to create 6 small wells or nests across the pan.
- Carefully crack one egg into each nest.
- Return the pan to the oven for 5–8 minutes. Remove when the egg whites are opaque but the yolks still have a slight jiggle.
