Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- ½ tsp (3g) salt
- ½ cup (115g) unsalted butter, softened
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- ¾ cup (180ml) whole milk
- 1 tbsp (15g) all-purpose flour
- 2 cups (300g) mixed fresh berries (blueberries, raspberries, blackberries)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch square or 9-inch round baking pan with butter and line the bottom with parchment paper.
- Using an electric mixer on medium-high, cream the softened butter and sugar together until the mixture is pale and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Sift the flour, baking powder, and salt into a separate bowl. Gradually add the dry ingredients and milk to the butter mixture, alternating between the two and starting and ending with the flour. Mix on low speed just until combined.
- In a small bowl, toss the mixed berries with the reserved 1 tbsp of flour until lightly coated. Gently fold the berries into the batter using a rubber spatula.
- Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
