Ingredients:

  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 2.5 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter, melted and cooled
  • 3 large eggs, room temperature
  • 1 cup whole milk, room temperature
  • 2 tsp pure vanilla extract
  • 2 cups mixed summer berries
  • 1 tbsp lemon juice
  • 1 tbsp granulated sugar
  • 8 oz full-fat cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease your 9x13 pan and line the bottom with parchment paper, leaving a small overhang on the sides for easy removal.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt until no clumps remain.
  4. Stir in the melted butter, eggs, milk, and vanilla extract.
  5. Whisk gently by hand until just combined. Stop as soon as the flour streaks disappear.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Gently press the mixed berries (tossed in lemon juice and sugar) into the top of the batter.
  8. Bake for 30-35 minutes until the edges are a pale golden brown and the center springs back when lightly touched.
