Ingredients:
- 2.5 cups all-purpose flour
- 1.5 cups granulated sugar
- 2.5 tsp baking powder
- 0.5 tsp salt
- 0.75 cup unsalted butter, melted and cooled
- 3 large eggs, room temperature
- 1 cup whole milk, room temperature
- 2 tsp pure vanilla extract
- 2 cups mixed summer berries
- 1 tbsp lemon juice
- 1 tbsp granulated sugar
- 8 oz full-fat cream cheese, softened
- 0.5 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 2 tbsp heavy cream
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease your 9x13 pan and line the bottom with parchment paper, leaving a small overhang on the sides for easy removal.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until no clumps remain.
- Stir in the melted butter, eggs, milk, and vanilla extract.
- Whisk gently by hand until just combined. Stop as soon as the flour streaks disappear.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Gently press the mixed berries (tossed in lemon juice and sugar) into the top of the batter.
- Bake for 30-35 minutes until the edges are a pale golden brown and the center springs back when lightly touched.
