Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg (50g)
  • 1 1/2 tsp (6ml) pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) milk
  • 1 tsp (5ml) vanilla extract
  • neon food coloring

Instructions:

  1. Beat the softened butter and granulated sugar on medium-high until the mixture looks pale and fluffy. Incorporate the egg and vanilla extract, mixing until fully combined and smooth.
  2. Whisk together the flour, baking powder, and salt in a separate bowl. Slowly add the dry mixture to the wet ingredients on low speed, stopping the moment the flour streaks disappear.
  3. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet. Bake at 350°F (175°C) for 8–10 minutes, removing them once edges are pale gold.
  4. Whisk together powdered sugar, milk, and vanilla extract until smooth. Divide the glaze into bowls, add food coloring, and pipe or spoon onto cooled cookies.
