Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg (50g)
- 1 1/2 tsp (6ml) pure vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) milk
- 1 tsp (5ml) vanilla extract
- neon food coloring
Instructions:
- Beat the softened butter and granulated sugar on medium-high until the mixture looks pale and fluffy. Incorporate the egg and vanilla extract, mixing until fully combined and smooth.
- Whisk together the flour, baking powder, and salt in a separate bowl. Slowly add the dry mixture to the wet ingredients on low speed, stopping the moment the flour streaks disappear.
- Scoop rounded tablespoons of dough onto a parchment-lined baking sheet. Bake at 350°F (175°C) for 8–10 minutes, removing them once edges are pale gold.
- Whisk together powdered sugar, milk, and vanilla extract until smooth. Divide the glaze into bowls, add food coloring, and pipe or spoon onto cooled cookies.
