Ingredients:
- 3 cups (375g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) salt
- 1 tbsp (8g) ground cinnamon
- 1 cup (200g) granulated white sugar
- 1 cup (200g) packed brown sugar
- 1 cup (225g) vegetable oil
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) pure vanilla extract
- 2 cups (300g) grated zucchini, unpacked
- 1/2 cup (60g) chopped walnuts
- 1/2 cup (90g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease two 9x5 inch loaf pans or line them with parchment paper.
- Grate the zucchini using the medium hole of your grater; do not squeeze out the liquid.
- In one large bowl, whisk together the flour, baking soda, salt, cinnamon, granulated white sugar, and brown sugar.
- Create a well in the center of the dry ingredients and pour in the vegetable oil, eggs, and vanilla extract.
- Stir with a spatula until just combined.
- Gently fold in the grated zucchini and the chopped walnuts and chocolate chips until no streaks of flour remain.
- Divide the batter evenly between the two prepared loaf pans.
- Bake for 50–60 minutes until the edges are pulling away from the sides and a toothpick inserted into the center comes out clean.
- Allow the loaves to cool in the pan for 10 minutes before transferring them to a wire rack.
