Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) salt
- 1 tbsp (6g) ground cinnamon
- 1 cup (200g) granulated sugar
- 1/2 cup (115g) vegetable oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (220g) grated zucchini, loosely packed
- 1/2 cup (85g) semi-sweet chocolate chips
- 1/2 cup (60g) chopped walnuts
- 8 oz (225g) full-fat cream cheese, softened
- 1/4 cup (55g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x9 inch square baking pan and line the bottom with parchment paper.
- Grate the zucchini using a box grater; do not squeeze out the moisture.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until no clumps remain.
- In a large bowl, beat eggs and granulated sugar until pale, then stir in the vegetable oil and vanilla extract.
- Gradually fold the dry flour mixture into the wet ingredients using a spatula until just combined.
- Gently fold in the grated zucchini, chocolate chips, and chopped walnuts.
- Spread the batter evenly into the prepared 9x9 pan.
- Bake on the center rack for 35–40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the cake to cool completely in the pan.
- Beat softened cream cheese and butter until smooth, then gradually add powdered sugar and vanilla until fluffy.
- Spread a thick layer of cream cheese frosting over the cooled cake.
