Ingredients:
- 1 lb pre-cooked chicken sausage, sliced into rounds
- 2 cups butternut squash, peeled and cubed into 1-inch pieces
- 2 cups Brussels sprouts, trimmed and halved
- 1 large red onion, cut into thick wedges
- 2 medium Honeycrisp apples, cubed into 1-inch pieces
- 3 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed sheet pan with parchment paper.
- In a large mixing bowl, combine sliced sausage, butternut squash, Brussels sprouts, and red onion. Drizzle with olive oil and maple syrup, then toss with garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Spread the mixture onto the prepared sheet pan in a single, even layer. Roast for 20 minutes.
- Remove pan briefly to toss in the cubed apples, then return to the oven for another 10–15 minutes until the squash is tender and sprouts are mahogany-colored.
- Switch the oven to 'Broil' for the final 2–3 minutes to char the edges of the sausage and sprouts.
