Ingredients:
- 2 ½ cups (300g) all-purpose flour, plus more for dusting
- 1 teaspoon (5g) fine sea salt
- 1 cup (226g) unsalted butter, very cold and cut into ½-inch cubes
- ½ cup (100g) solid vegetable shortening, very cold and cut into ½-inch cubes
- ½ cup (120ml) ice water, plus 1-2 tablespoons more if needed
Instructions:
- In your large mixing bowl, whisk together the flour and salt. This ensures even distribution and prevents pockets of over-seasoning.
- Add the cold butter cubes and shortening to the flour mixture. Using a pastry blender or your fingertips, cut the fat into the flour until the mixture resembles coarse meal with some pea-sized pieces of fat remaining.
