Ingredients:

  • 1 cup (226g) unsalted butter, very cold and cut into ½-inch cubes
  • ½ cup (100g) solid vegetable shortening, very cold and cut into ½-inch cubes
  • ½ cup (120ml) ice water, plus 1-2 tablespoons more if needed

Instructions:

  1. In your large mixing bowl, whisk together the flour and salt. This ensures even distribution and prevents pockets of over-seasoning.
  2. Add the cold butter cubes and shortening to the flour mixture. Using a pastry blender or your fingertips, cut the fat into the flour until the mixture resembles coarse meal with some pea-sized pieces of fat remaining.
