Ingredients:

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 2 tsp simple syrup
  • 1 pinch fine sea salt
  • 8 fresh mint leaves
  • 1 mint sprig (for garnish)
  • 3 fresh lime wheels
  • 2 oz chilled club soda
  • 1 cup crushed ice

Instructions:

  1. Place the fresh mint leaves and simple syrup in the bottom of a highball glass.
  2. Press down gently 3-4 times with a muddler until the mint smells fragrant and the syrup looks green tinted.
  3. Pour in the fresh lime juice and add the pinch of salt, stirring briefly to combine.
  4. Pour in the white rum and stir again until the syrup is fully integrated and the liquid is uniform.
  5. Fill the glass 3/4 full with crushed ice.
  6. Top with chilled club soda until the liquid reaches just below the rim.
  7. Use a long spoon to gently lift the mint leaves from the bottom until they are distributed throughout the glass.
  8. Top with the remaining crushed ice.
  9. Garnish with a slapped mint sprig and lime wheels.
