Ingredients:
- 8 oz goat cheese log, softened to room temperature
- 4 oz low-fat cream cheese, softened
- 1/2 cup plain Greek yogurt (2% fat)
- 1 tbsp extra virgin olive oil
- 6 cloves roasted garlic, mashed into a paste
- 2 tbsp fresh parsley, finely chopped
- 1 tsp fresh thyme leaves
- 1 tsp fresh rosemary, minced
- 1/2 tsp lemon zest
- 1/4 tsp cracked black pepper
- 1/8 tsp sea salt
Instructions:
- Place the room temperature goat cheese, softened cream cheese, and Greek yogurt into a medium mixing bowl or food processor.
- Using a handheld electric mixer or food processor, blend the cheeses and yogurt on medium-high speed for 2–3 minutes until the mixture is pale, light, and increased in volume.
- Using a rubber spatula, gently fold in the mashed roasted garlic paste, parsley, thyme, rosemary, and lemon zest until just combined.
- Transfer the dip to a shallow serving bowl. Use the back of a spoon to create swirls on the surface, then drizzle with extra virgin olive oil and a final dusting of cracked black pepper.
