Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) baking powder
- 1 tbsp (8g) ground cinnamon
- 1/2 tsp (3g) sea salt
- 1 cup (245g) plain Greek yogurt
- 1/2 cup (170g) honey
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (300g) grated zucchini
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- Grate the zucchini using the fine side of a box grater; if exceptionally watery, press gently with a paper towel without squeezing completely dry.
- In a large mixing bowl, whisk together the Greek yogurt, honey, eggs, and vanilla extract until the mixture is smooth and pale.
- Gradually stir in the flour, baking soda, baking powder, cinnamon, and salt.
- Fold in the grated zucchini using a silicone spatula just until no streaks of flour remain, taking care not to overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 50–60 minutes until the edges pull away from the sides and a toothpick inserted into the center comes out clean.
