Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) baking powder
  • 1 tbsp (8g) ground cinnamon
  • 1/2 tsp (3g) sea salt
  • 1 cup (245g) plain Greek yogurt
  • 1/2 cup (170g) honey
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 2 cups (300g) grated zucchini

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using the fine side of a box grater; if exceptionally watery, press gently with a paper towel without squeezing completely dry.
  3. In a large mixing bowl, whisk together the Greek yogurt, honey, eggs, and vanilla extract until the mixture is smooth and pale.
  4. Gradually stir in the flour, baking soda, baking powder, cinnamon, and salt.
  5. Fold in the grated zucchini using a silicone spatula just until no streaks of flour remain, taking care not to overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50–60 minutes until the edges pull away from the sides and a toothpick inserted into the center comes out clean.
