Ingredients:

  • 4 (6-oz) Center-cut salmon fillets, skin-on
  • 2 tbsp extra virgin olive oil
  • 1 lemon, halved
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Clean your grill grates thoroughly and preheat the grill to medium-high heat (approximately 400°F / 200°C). Pat the salmon fillets completely bone-dry with paper towels to ensure a good sear.
  2. Brush the flesh side of the salmon with olive oil. In a small bowl, combine salt, pepper, garlic powder, smoked paprika, and oregano, then apply generously to the salmon. Lightly oil the grill grates.
  3. Place the salmon onto the grill, flesh-side down first. Close the lid and sear for 3–4 minutes without moving them until they release naturally from the grate.
  4. Carefully flip the fillets using a fish spatula to skin-side down. Place lemon rounds on the grill. Continue to grill for 4–5 minutes until the internal temperature reaches 135°F (57°C). Remove and rest until it reaches 140°F (60°C).
  5. Garnish with fresh parsley and a squeeze of grilled lemon juice before serving.
