Ingredients:
- 2 large bananas (approx. 12 oz / 340g), peeled and halved lengthwise
- 1/2 cup (90g) white chocolate chips
- 1 tsp (5ml) coconut oil
- 8 mini chocolate chips (approx. 1 tsp / 5g)
Instructions:
- Line a baking sheet with parchment paper. Place the halved bananas on the sheet, ensuring they aren't touching, and freeze for at least 60 minutes until firm.
- Place the white chocolate chips and coconut oil in a microwave-safe glass bowl. Microwave in 20-second intervals, stirring between each session, until the mixture is velvety and smooth.
- Using a toothpick or popsicle stick, dip each frozen banana into the melted chocolate. Lift and swirl to cover the body, leaving the top 1/4 inch of the banana exposed to create the head.
- Immediately press two mini chocolate chips into the exposed top section of each banana to create the eyes.
- Return the tray to the freezer for another 20 minutes until the chocolate shell is completely hardened.
