Ingredients:

  • 2 large bananas (approx. 12 oz / 340g), peeled and halved lengthwise
  • 1/2 cup (90g) white chocolate chips
  • 1 tsp (5ml) coconut oil
  • 8 mini chocolate chips (approx. 1 tsp / 5g)

Instructions:

  1. Line a baking sheet with parchment paper. Place the halved bananas on the sheet, ensuring they aren't touching, and freeze for at least 60 minutes until firm.
  2. Place the white chocolate chips and coconut oil in a microwave-safe glass bowl. Microwave in 20-second intervals, stirring between each session, until the mixture is velvety and smooth.
  3. Using a toothpick or popsicle stick, dip each frozen banana into the melted chocolate. Lift and swirl to cover the body, leaving the top 1/4 inch of the banana exposed to create the head.
  4. Immediately press two mini chocolate chips into the exposed top section of each banana to create the eyes.
  5. Return the tray to the freezer for another 20 minutes until the chocolate shell is completely hardened.
