Ingredients:

  • 4 cups fresh blackberries
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1 cup self-rising flour
  • 1/2 cup granulated sugar
  • 3/4 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the blackberries with 3/4 cup sugar, cornstarch, lemon juice, and cinnamon.
  3. Stir gently until the berries are evenly coated and the sugar has begun to draw out the natural juices.
  4. Pour the blackberry mixture into a 9x9 inch baking dish, spreading them evenly to the edges.
  5. In a mixing bowl, whisk together the self-rising flour and 1/2 cup sugar.
  6. Stir in the milk and vanilla extract until just combined, being careful not to overmix.
  7. Pour the melted butter directly into the bottom of the baking dish under the berries, or whisk it into the batter.
  8. Spoon the batter over the berries in dollops, leaving some berries visible.
  9. Place the dish in the center rack of the oven and bake for 50 minutes until the crust is golden brown.
