Ingredients:
- 4 cups fresh blackberries
- 3/4 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp ground cinnamon
- 1 cup self-rising flour
- 1/2 cup granulated sugar
- 3/4 cup whole milk
- 1/2 cup unsalted butter, melted
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the blackberries with 3/4 cup sugar, cornstarch, lemon juice, and cinnamon.
- Stir gently until the berries are evenly coated and the sugar has begun to draw out the natural juices.
- Pour the blackberry mixture into a 9x9 inch baking dish, spreading them evenly to the edges.
- In a mixing bowl, whisk together the self-rising flour and 1/2 cup sugar.
- Stir in the milk and vanilla extract until just combined, being careful not to overmix.
- Pour the melted butter directly into the bottom of the baking dish under the berries, or whisk it into the batter.
- Spoon the batter over the berries in dollops, leaving some berries visible.
- Place the dish in the center rack of the oven and bake for 50 minutes until the crust is golden brown.
