Ingredients:

  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 1 cup (30g) fresh mint leaves, packed
  • 1 ½ cups (355ml) freshly squeezed lemon juice
  • 6 cups (1.4L) cold filtered water
  • ¼ tsp (1.5g) salt
  • 1 lemon, sliced into thin rounds
  • 8 sprigs of fresh mint
  • Ice cubes

Instructions:

  1. Combine sugar and water in a small saucepan over medium heat. Stir until the sugar dissolves completely.
  2. Remove from heat immediately and stir in the fresh mint leaves.
  3. Cover and let steep for 10 minutes until the syrup is pale green and fragrant.
  4. Strain through a fine-mesh sieve into a bowl and cool.
  5. Pour the freshly squeezed lemon juice into a large pitcher along with the cold filtered water and a pinch of salt; stir briskly to combine.
  6. Pour the cooled mint simple syrup into the lemon-water mixture.
  7. Stir until the liquid looks uniform and translucent.
