Ingredients:
- 1 cup (240g) Full-fat sour cream
- 1/4 cup (60ml) Heavy whipping cream
- 2 tbsp (30g) High-quality mayonnaise
- 1/2 cup (125g) Prepared horseradish, drained of excess liquid
- 1 tbsp (15ml) Freshly squeezed lemon juice
- 1 tsp (5ml) Apple cider vinegar
- 1/2 tsp (3g) Kosher salt
- 1/4 tsp (1g) Coarsely ground black pepper
- 1 tbsp (4g) Fresh chives, finely minced
- 1/2 tsp (2g) Worcestershire sauce
Instructions:
- Drain the prepared horseradish through a fine-mesh strainer, pressing lightly with a spoon to remove the harsh vinegar brine.
- In a chilled small stainless steel or glass mixing bowl, combine the sour cream, heavy cream, and mayonnaise.
- Whisk the dairy mixture vigorously for 30 seconds until the mixture looks glossy and slightly thickened.
- Fold in the drained horseradish, lemon juice, vinegar, salt, pepper, chives, and Worcestershire sauce until well combined.
- Transfer to an airtight glass jar and chill until ready to serve alongside prime rib.
