Ingredients:

  • 1 cup (240g) Full-fat sour cream
  • 1/4 cup (60ml) Heavy whipping cream
  • 2 tbsp (30g) High-quality mayonnaise
  • 1/2 cup (125g) Prepared horseradish, drained of excess liquid
  • 1 tbsp (15ml) Freshly squeezed lemon juice
  • 1 tsp (5ml) Apple cider vinegar
  • 1/2 tsp (3g) Kosher salt
  • 1/4 tsp (1g) Coarsely ground black pepper
  • 1 tbsp (4g) Fresh chives, finely minced
  • 1/2 tsp (2g) Worcestershire sauce

Instructions:

  1. Drain the prepared horseradish through a fine-mesh strainer, pressing lightly with a spoon to remove the harsh vinegar brine.
  2. In a chilled small stainless steel or glass mixing bowl, combine the sour cream, heavy cream, and mayonnaise.
  3. Whisk the dairy mixture vigorously for 30 seconds until the mixture looks glossy and slightly thickened.
  4. Fold in the drained horseradish, lemon juice, vinegar, salt, pepper, chives, and Worcestershire sauce until well combined.
  5. Transfer to an airtight glass jar and chill until ready to serve alongside prime rib.
