Ingredients:
- 1 cup (200g) granulated sugar
- 1 tablespoon (8g) cornstarch
Instructions:
- Place the granulated sugar and cornstarch into the high-speed blender carafe.
- Secure the lid tightly and cover it with a clean kitchen towel to catch any escaping fine sugar dust.
- Process on the highest speed for 45–60 seconds until a fine white cloud forms inside the blender.
- Stop the blender and rub a small amount of the sugar between your fingers to ensure it feels soft and flour-like, not gritty.
- Sift the mixture through a fine-mesh sieve into a bowl to remove any remaining granules and aerate the powder.
- Allow the sugar to sit for 60 seconds to let the dust settle before transferring to an airtight storage container.
