Ingredients:

  • 1 cup (200g) granulated sugar
  • 1 tablespoon (8g) cornstarch

Instructions:

  1. Place the granulated sugar and cornstarch into the high-speed blender carafe.
  2. Secure the lid tightly and cover it with a clean kitchen towel to catch any escaping fine sugar dust.
  3. Process on the highest speed for 45–60 seconds until a fine white cloud forms inside the blender.
  4. Stop the blender and rub a small amount of the sugar between your fingers to ensure it feels soft and flour-like, not gritty.
  5. Sift the mixture through a fine-mesh sieve into a bowl to remove any remaining granules and aerate the powder.
  6. Allow the sugar to sit for 60 seconds to let the dust settle before transferring to an airtight storage container.
