Ingredients:

  • 4 boneless, skinless chicken breasts (approx. 7 oz each)
  • 1 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp dried oregano
  • 1 tsp kosher salt
  • 0.5 tsp cracked black pepper
  • 0.25 tsp cayenne pepper
  • 1 tbsp fresh parsley, minced

Instructions:

  1. Pat the chicken breasts completely dry with paper towels to ensure optimal oil and spice adhesion.
  2. Mix the rub. In a small bowl, combine 1 tbsp extra virgin olive oil, 1 tsp smoked paprika, 1 tsp garlic powder, 0.5 tsp onion powder, 0.5 tsp dried oregano, 1 tsp kosher salt, 0.5 tsp black pepper, and 0.25 tsp cayenne.
  3. Apply the paste. Rub the mixture evenly over both sides of the meat.
  4. Preheat air fryer to 375°F (190°C) for 3 minutes.
  5. Place chicken in a single layer in the air fryer basket, ensuring pieces do not overlap.
  6. Cook at 375°F for 8 minutes.
  7. Flip the meat. Carefully turn each piece over using tongs.
  8. Continue cooking for 5-7 minutes until the internal temperature reaches 160°F.
  9. Rest the meat. Transfer to a plate and cover loosely with foil for 5 minutes.
  10. Garnish and serve. Sprinkle with 1 tbsp fresh parsley before slicing.
