Ingredients:
- 3 cups (450g) leftover turkey, skin removed and diced into ½-inch cubes
- ½ cup (60g) celery, finely diced
- ¼ cup (40g) red onion, minced
- ⅓ cup (50g) dried cranberries
- ⅓ cup (40g) pecans, toasted and chopped
- ½ cup (120ml) mayonnaise
- ¼ cup (60g) plain Greek yogurt
- 1 tbsp (15ml) Dijon mustard
- 1 tbsp (15ml) fresh lemon juice
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) black pepper
Instructions:
- Dice your leftover turkey into uniform, small cubes and finely mince the onion and celery.
- In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until the mixture is smooth and glossy.
- Add the diced turkey, celery, onion, cranberries, and pecans to a large mixing bowl.
- Pour the dressing over the ingredients and gently fold together with a spatula until the turkey is fully coated.
