Ingredients:

  • 3 cups (450g) leftover turkey, skin removed and diced into ½-inch cubes
  • ½ cup (60g) celery, finely diced
  • ¼ cup (40g) red onion, minced
  • ⅓ cup (50g) dried cranberries
  • ⅓ cup (40g) pecans, toasted and chopped
  • ½ cup (120ml) mayonnaise
  • ¼ cup (60g) plain Greek yogurt
  • 1 tbsp (15ml) Dijon mustard
  • 1 tbsp (15ml) fresh lemon juice
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) black pepper

Instructions:

  1. Dice your leftover turkey into uniform, small cubes and finely mince the onion and celery.
  2. In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until the mixture is smooth and glossy.
  3. Add the diced turkey, celery, onion, cranberries, and pecans to a large mixing bowl.
  4. Pour the dressing over the ingredients and gently fold together with a spatula until the turkey is fully coated.
