Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- ½ tsp (3g) salt
- 1 cup (200g) granulated sugar
- 2 tbsp (6g) fresh lemon zest
- ½ cup (115g) unsalted butter, softened
- 2 large eggs (100g)
- ¼ cup (60ml) Greek yogurt
- 2 tbsp (30ml) fresh lemon juice
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (170g) grated zucchini, squeezed dry
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) fresh lemon juice
- ½ tsp (1g) lemon zest
Instructions:
- Grate the zucchini using a medium box grater. Place the shreds in a clean kitchen towel or paper towels and squeeze firmly over the sink to remove excess water.
- In a bowl, combine granulated sugar and 2 tbsp lemon zest. Rub the zest into the sugar with fingertips until fragrant.
- Grease a 9x5 inch loaf pan and line it with parchment paper.
- Beat the softened butter and zest-infused sugar until light and fluffy, approximately 3 minutes.
- Add eggs one at a time, beating well after each addition. Stir in the Greek yogurt, lemon juice, and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture on low speed.
- Gently fold in the squeezed-dry grated zucchini until evenly distributed.
- Pour batter into the prepared pan and bake for 55 minutes or until a toothpick comes out clean.
- Allow the cake to cool on a wire rack for 1 hour.
- Whisk together powdered sugar, 1-2 tbsp lemon juice, and ½ tsp lemon zest to create a glaze. Pour over the cooled cake.
