Ingredients:

  • 1 lb ground chicken (lean)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp fine sea salt
  • 1/3 cup low sugar marinara sauce
  • 1.5 cups shredded low moisture mozzarella cheese

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Transfer the mixture to the prepared pan. Place a second sheet of parchment on top and use a rolling pin to flatten it to about 1/4 inch thickness. Remove the top sheet of paper before baking.
  3. Bake for 15-20 minutes until the surface is dry and the edges are starting to brown.
  4. Remove the crust from the oven. Spread 1/3 cup marinara sauce over the top, leaving a small border for the crust. Sprinkle 1.5 cups mozzarella evenly over the sauce.
  5. Return to the oven for 5-10 minutes until the cheese is bubbling and has small golden spots.
