Ingredients:
- 3 cups (375g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- 1 cup (200g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 3 large eggs (150g)
- 1 cup (240g) sour cream
- 1 tsp (5ml) vanilla extract
- 3 cups (450g) finely shredded zucchini
- 8 oz (225g) full-fat cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) heavy cream
Instructions:
- Preheat your oven to 350°F (175°C). Generously grease the Bundt pan with butter or baking spray, then dust with flour, tapping out the excess.
- Finely grate the zucchini using the smallest holes on the grater.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, beat the softened butter and sugar until light and fluffy (about 3 minutes).
- Add eggs one at a time, beating well after each addition, then stir in the sour cream and vanilla extract until smooth.
- Gradually fold in the dry ingredients using a spatula. Stop the moment you see no more streaks of flour.
- Gently fold in the shredded zucchini until evenly distributed.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 50–60 minutes, or until the edges pull away slightly and a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the cake to cool in the pan before removing and applying the cream cheese frosting (made by beating together cream cheese, butter, powdered sugar, vanilla, and heavy cream).
