Ingredients:
- 1 cup (250g) Creamy Peanut Butter
- 1/4 cup (55g) Unsalted Butter, softened
- 1 tsp (5ml) Pure Vanilla Extract
- 1/4 tsp (1.5g) Fine Sea Salt
- 2 cups (240g) Powdered Sugar, sifted
- 1.5 cups (135g) Quick Oats
- 1.5 cups (255g) Semi-Sweet Chocolate Chips
- 1 tbsp (15ml) Coconut Oil
Instructions:
- In a large mixing bowl, beat peanut butter, softened butter, vanilla, and sea salt on medium speed until the mixture is pale and smooth.
- Gradually add the powdered sugar on low speed until fully incorporated. Fold in the quick oats by hand using a spatula until a dough forms.
- Scoop 1 tablespoon of dough and roll into 1-inch spheres. Place on a parchment-lined baking sheet and refrigerate for 30 minutes until firm.
- Melt chocolate chips and coconut oil in the microwave in 30-second intervals. Use a fork to dip each chilled ball into the chocolate, tapping off the excess.
- Return the chocolate-covered balls to the refrigerator for 15 minutes until the shell is completely set and matte.
