Ingredients:

  • 1 cup (250g) Creamy Peanut Butter
  • 1/4 cup (55g) Unsalted Butter, softened
  • 1 tsp (5ml) Pure Vanilla Extract
  • 1/4 tsp (1.5g) Fine Sea Salt
  • 2 cups (240g) Powdered Sugar, sifted
  • 1.5 cups (135g) Quick Oats
  • 1.5 cups (255g) Semi-Sweet Chocolate Chips
  • 1 tbsp (15ml) Coconut Oil

Instructions:

  1. In a large mixing bowl, beat peanut butter, softened butter, vanilla, and sea salt on medium speed until the mixture is pale and smooth.
  2. Gradually add the powdered sugar on low speed until fully incorporated. Fold in the quick oats by hand using a spatula until a dough forms.
  3. Scoop 1 tablespoon of dough and roll into 1-inch spheres. Place on a parchment-lined baking sheet and refrigerate for 30 minutes until firm.
  4. Melt chocolate chips and coconut oil in the microwave in 30-second intervals. Use a fork to dip each chilled ball into the chocolate, tapping off the excess.
  5. Return the chocolate-covered balls to the refrigerator for 15 minutes until the shell is completely set and matte.
