Ingredients:
- 4 cups (600g) fresh peaches, peeled and sliced
- 1/2 cup (100g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/4 tsp (1.5g) salt
- 1 cup (240ml) whole milk
- 1/2 cup (113g) unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, toss the sliced peaches with sugar, lemon juice, cinnamon, and salt. Let them sit for 5 minutes until the peaches look glossy and have released their juices.
- Pour the peach mixture into a 9x9 inch baking dish.
- In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
- Stir in the milk until just combined; do not over-mix.
- Pour the melted butter into the bottom of the baking dish (if not already added) or drizzle it over the fruit, then pour the batter evenly over the top without stirring.
- Bake on the center rack for 40–45 minutes until the filling bubbles around the edges and the topping is a deep, mahogany-colored brown.
