Ingredients:

  • 3 large ripe bananas (375g)
  • 1/2 cup (113g) unsalted butter, melted
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 2 tbsp (30g) sour cream
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 tsp ground cinnamon
  • 1.5 cups (190g) all-purpose flour
  • 1/2 cup (90g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8.5 x 4.5-inch loaf pan with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, mash the peeled bananas with a fork or potato masher until mostly smooth but with a few small lumps for texture.
  3. Stir the melted butter into the mashed bananas until fully combined. Incorporate the brown sugar, egg, vanilla, and sour cream. Whisk vigorously with your fork until the mixture looks uniform.
  4. Sprinkle the baking soda, salt, and cinnamon directly over the wet mixture and stir well to ensure even distribution.
  5. Add the all-purpose flour. Use a spatula to fold the flour in gently, stopping the moment you see no more white streaks.
  6. Fold in the chocolate chips. Pour the batter into the prepared pan and bake for 55 minutes, or until a tester inserted into the center comes out clean.
