Ingredients:
- 3 large ripe bananas (375g)
- 1/2 cup (113g) unsalted butter, melted
- 3/4 cup (150g) brown sugar, packed
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 2 tbsp (30g) sour cream
- 1 tsp baking soda
- 1/2 tsp fine sea salt
- 1 tsp ground cinnamon
- 1.5 cups (190g) all-purpose flour
- 1/2 cup (90g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Line an 8.5 x 4.5-inch loaf pan with parchment paper, leaving an overhang on the sides.
- In a large mixing bowl, mash the peeled bananas with a fork or potato masher until mostly smooth but with a few small lumps for texture.
- Stir the melted butter into the mashed bananas until fully combined. Incorporate the brown sugar, egg, vanilla, and sour cream. Whisk vigorously with your fork until the mixture looks uniform.
- Sprinkle the baking soda, salt, and cinnamon directly over the wet mixture and stir well to ensure even distribution.
- Add the all-purpose flour. Use a spatula to fold the flour in gently, stopping the moment you see no more white streaks.
- Fold in the chocolate chips. Pour the batter into the prepared pan and bake for 55 minutes, or until a tester inserted into the center comes out clean.
