Ingredients:
- 4 thin-sliced chicken breasts, approx 1.5 lbs (680g)
- 2 tbsp vegetable oil
- ½ tsp kosher salt
- ½ tsp cracked black pepper
- 1 cup grated Parmesan cheese
- 2 tbsp mayonnaise
- 1 tsp garlic powder
- ½ tsp paprika
- 4 slices Provolone cheese
Instructions:
- Preheat the oven to 450°F (230°C). Season the chicken breasts with salt and pepper.
- Heat vegetable oil in an oven-safe skillet over medium-high heat until shimmering. Sear chicken for 3–4 minutes per side until a golden-brown sear forms.
- While the chicken is still in the pan, place one slice of Provolone cheese on each breast.
- In a small bowl, mix the grated Parmesan, mayonnaise, garlic powder, and paprika into a thick paste. Spread the mixture generously over the Provolone, pressing down firmly.
- Transfer the skillet to the oven and bake for 10–15 minutes.
- Switch the oven to broil for the final 2 minutes until the cheese is bubbly and deep mahogany brown. Remove when the internal temperature reaches 165°F (74°C).
