Ingredients:

  • 4 thin-sliced chicken breasts, approx 1.5 lbs (680g)
  • 2 tbsp vegetable oil
  • ½ tsp kosher salt
  • ½ tsp cracked black pepper
  • 1 cup grated Parmesan cheese
  • 2 tbsp mayonnaise
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 4 slices Provolone cheese

Instructions:

  1. Preheat the oven to 450°F (230°C). Season the chicken breasts with salt and pepper.
  2. Heat vegetable oil in an oven-safe skillet over medium-high heat until shimmering. Sear chicken for 3–4 minutes per side until a golden-brown sear forms.
  3. While the chicken is still in the pan, place one slice of Provolone cheese on each breast.
  4. In a small bowl, mix the grated Parmesan, mayonnaise, garlic powder, and paprika into a thick paste. Spread the mixture generously over the Provolone, pressing down firmly.
  5. Transfer the skillet to the oven and bake for 10–15 minutes.
  6. Switch the oven to broil for the final 2 minutes until the cheese is bubbly and deep mahogany brown. Remove when the internal temperature reaches 165°F (74°C).
