Ingredients:
- 2 thick slices Sourdough bread (approx. 90g total)
- 1 tbsp Unsalted butter, softened
- 1 tsp Mayonnaise
- 1/4 tsp Garlic powder
- 1/8 tsp Dried oregano
- 2 tbsp Thick pizza sauce or marinara
- 1/2 cup Low-moisture whole milk mozzarella, shredded
- 2 slices Provolone cheese
- 10 thin slices pepperoni
- 1 tsp Freshly grated Parmesan cheese
- 1 pinch Red pepper flakes
Instructions:
- In a small bowl, mash together the softened butter, mayonnaise, garlic powder, and oregano. Spread this mixture evenly on one side of each bread slice.
- Place one slice of bread, butter side down, on a clean board. Layer on 1 slice of provolone, then spread the 2 tbsp pizza sauce over the cheese.
- Pile on the 10 slices of pepperoni, then the 1/2 cup of shredded mozzarella. Top with the second slice of provolone and finally the second piece of sourdough, butter side up.
- Place the sandwich in a cold skillet, then turn the heat to medium low. Cook for about 4 minutes until the bottom is golden brown and crackling.
- Carefully flip the sandwich. Cover the pan with a lid for 2 minutes to ensure the mozzarella is fully molten. Remove the lid and cook for another 2 minutes until the second side is deep golden and the cheese is weeping.
- Immediately sprinkle the 1 tsp Parmesan cheese and a pinch of red pepper flakes over the hot crust. Let it rest on a wire rack for 1 minute before slicing.
